Last weekend, I had the pleasure of attending a Korean class where we learned to make this iconic dish using only the freshest organic fruits and vegetables, and absolutely no sugar.

The class began with a brief history of kimchi and its importance in Korean culture. Then, we dove right into the hands-on experience. We chopped, mixed, and seasoned our ingredients, guided by our enthusiastic instructor who shared tips and tricks passed down through generations.
